Vinification

The grapes to produce this great white come from one of our Quintas, situated in the plateau of Celeirós, near Sabrosa. This is a very fresh and xistus area. The grape varieties used to do this wine are all Douro varieties: Viosinho, Rabigato. Each one gives a different characteristic to this wine: freshness and structure. They were carefully handpicked and selected. In the winery all the processed was done in reduced processed to avoid oxidization: they were carefully crushed, pressed and fermented in low temperatures for a long period in French barriques. After fermentation they rest in the same barriques for one year and the frist months we do batonage.
